I chose One Dish At A Time Best Recipes especially since I don’t consider myself being a cook. While growing up my mother never did the cooking in the house, but I still was able to have a good meal. Family to me is very important since my 3 sisters and I never grew up together. We got separated but I still managed to keep in touch with them growing up.

The menu for this occasion was Jambalaya filled with sausages, corn, carrots, potatoes, and boiled eggs seasoned to perfection. Fish and Crabs included with all of the cracking and breaking down the shell to enjoy it. Finger Likin and lots of Smacking Good! My nieces of course selected a nice bottle of wine to have along with our meal.

My One Dish At A Time Best Recipes even though I don’t cook much I was able to put together a small pan of Cornpoon. Which of course I usually call my cousin Albertha for an easy put together meal. My ingredients needed: Sour Cream, Butter, Jiffy Mix, Sugar, Cream Style Corn and Whole Kernel Corn.

Sour Cream 1/2 cup of a 8 oz container

Butter 1 stick melted down

Jiffy Cornbread mix 1 box

1 Tablespoon of Sugar

1- can of Cream Style Corn/1-can of Whole Kernel Corn

Well, if you have a larger group you just increase your measurements. After I mix it all together, making sure to save some of the melted butter to pour across the top. I placed it in a tin pan and baked it at 350° for approximately 20 minutes . Surprisingly, everyone enjoyed it! That put a smile on my face. Now, I don’t mind getting in the kitchen helping with cutting up veggies, peelings, and cleaning.

No need to cover it up while in the oven, just prepare it like you bake your cornbread. Not so bad for my first dish for One Dish At A Time Best Recipes. Moving along now from the family Celebration Time to my Gift Giving Moments of Love.

Gift Giving Moment Of Love:

It all started when I was working. My supervisor and her husband baked together Zucchini Bread. Truly what you call a Gift Giving Moment of Love sharing with all of her co-workers. Never before in my wildest dreams I thought of Zucchini Bread but I do know that I love to eat squash. The bread was delicious and of course I couldn’t get enough of it. So, I asked Leonia (God Bless Her Soul) for the recipe, and before she retired she shared it with us. You will need a cooking tool which is used for grating to sherd the Zucchini. Wash the Zucchini off, pat it dry and don’t peel anything off just cut the tip ends.

Ingredients needed: large eggs, canola or vegetable oil, granulated sugar, brown sugar, vanilla extract, all purpose flour, baking soda, cinnamon, kosher salt, chopped pecans, raisins, or walnuts and the main ingredient Zucchini.

  • 3-large eggs
  • 1 cup of canola or vegetable oil
  • 1/2 of granulated sugar
  • 2 cups of light brown sugar, packed
  • 2 teaspoons of pure vanilla extract
  • 3 cups of all purpose flour
  • 1 teaspoon of baking soda
  • 2 teaspoons of cinnamon
  • 1 teaspoon of kosher salt
  • 1 cup of chopped pecans or raisins (most of my family like pecans/just a handful like raisins)
  • 2 cups of unpeeled Zucchini already shredded

I start off taking my loaf pans and spray them down with Baker’s Joy, and then I move my pans to the side. In 1 bowl I beat my eggs all together and then I slowly start adding the oil and granulated sugar, blending it until it thickened. Then add my brown sugar and vanilla extract along with mixing in the Zucchini. Using a separate bowl using a whisker I put together my flour, baking soda, cinnamon and salt while breaking up the flour lumps. Then I add my pecans or raisins while whisking away.

After all of that I start combining my dry ingredients with the wet ones and gently mix it all together. Don’t beat it, just make sure everything mixes well. I use my heavy wooden spoon to mix it all together. This will take a lot of stirring while mixing it with LOVE. After everything is mixed together I pour the mix evenly into my prepared pans, and place them in the oven at 350° F approximately 45 to 50 minutes.

Start checking your bread carefully around the 40 minute mark to check the middle making sure that it is drying up inside. You want to make sure the toothpick comes out clean. Don’t over bake your bread because you don’t want it to come out dry. One Dish At A Time Best Recipes.
